Phyllis wished, selfishly, that she could show Julienne the world like this everyday. She wanted the opportunity to take her on adventures, and show her what life could be like. She respected Julienne's life as a nun, of course, but that didn't mean she didn't feel sorrowful at the knowledge that Julienne was missing out on so much that she so clearly craved.
TL:DR: Phyllis Crane notices Sister Julienne eyeing a dress, and takes it upon herself to take her on an overnight trip so Julienne can have the chance to wear it. Also, they're secretly in love with each other.
